Simple Chicken Parmesan

Don’t we all love Chicken Parmesan?  But it’s summer time; we don’t necessarily want to spend too much time in our kitchens, yet the family is ready to eat.  What to fix?  I developed this abbreviated version for college kids who needed simple and easy.  Give it a try!  It might just become one of your “go-to” recipes when time is tight . . . like tonight!

Simple Chicken Parmesan

Total Time: 30 minutes

Yield: 4 servings

  • Simple Chicken Parmesan
  • 1 cup whole grain pasta
  • 1 cup cooked diced chicken
  • ½ cup shredded part-skim mozzarella cheese
  • 2 cups of your favorite spaghetti sauce
  • ½ cup shaved Parmesan cheese
  • 1 tsp dried or 1 Tbsp chopped fresh basil leaves
  1. Cook pasta according to package directions. Drain and keep warm.
  2. Arrange chicken in a 2-quart baking dish coated with cooking spray. Spread mozzarella cheese, sauce, Parmesan cheese and basil over top.
  3. Bake at 350 degrees for 20-30 minutes or until heated through.
  4. Serve over pasta. Add a tossed green salad or steamed veggies.

    I have loved reading your posts, and making a few of your recipes. At first I was printing them……..
    I have a lot of recipe books, but sad to admit, I don’t cook 🙁 very often.
    What I’m loving most is that all of these wonderful recipes are right here on my phone!!! 🙂 When I am at the grocery store– yahoo it’s all right here 🙂 and I am able to get what I need to make
    a dinner or dessert!
