Colorful apples on corner fruit and produce stands herald the arrival of fall.  Here’s to whoever proclaimed that “an apple-a-day may indeed keep the doctor away”. The anti-oxidant properties of apples including a powerful flavanoid called quercitin, helps regulate blood sugar and has been shown to reduce incidence of lung cancer.  Your daily bowel habits and blood cholesterol will appreciate the positive effects of the soluble fiber content of an apple.


This beautiful salad features not only healthful apples, but superfoods like spinach, almonds, green onions and of course protein-packed chicken.  I wanted to find a complimentary dressing for all of this nutritional goodness and I found it in this creamy curry dressing made with lemon Greek yogurt, lemon juice and yellow curry.  Top with sugared almond slices for a fabulous crunch.

Total Time: 20 minutes

Yield: 4-6 servings

  • Chopped Chicken, Apple and Spinach Salad with Creamy Curry Dressing
  • 1/4 cup sliced almonds
  • 2 Tbsp sugar
  • 4 cups sliced spinach leaves
  • 1 cup diced apple
  • 1 cup diced cooked chicken
  • 1/2 cup diced celery
  • 1/4 cup sliced green onion
  • Dressing
  • 1/4 cup light olive oil mayonnaise
  • 1/4 cup Greek lemon yogurt (I use Chobani)
  • 3 Tbsp fresh lemon juice
  • 2 Tbsp water
  • 1 Tbsp agave nectar
  • 1 tsp curry powder
  • 1/4 tsp each sea salt and fresh ground black pepper
  1. Combine almonds and sugar in a small skillet over medium-high heat; cook and stir until sugar is melted over almonds, about 3 minutes. Spread almonds in a single layer on waxed paper to cool.
  2. Combine spinach, apple, chicken, celery and green onion in a medium bowl.
  3. For the Dressing: Combine all dressing ingredients in a small bowl and whisk together until well blended.
  4. Drizzle dressing over salad and top with sugared almonds.
